Gavi

Cortese grapes grown in Gavi are pressed softly to extract only the best juice, which is then fermented very slowly - for as long as 20 days - at a controlled temperature of 18-20°C. to preserve its wealth of aromas. This is an extremely appealing wine as early as the spring following the vintage, but is at its very best after several months of maturing in the bottle.
