Valpolicella DOC Ripasso
Corvina Veronese 70%, Rondinella 30%
This prestigious wine is obtained by an ancient tecnique known in
the Veronese area as "ripasso". This tecnique consists
of giving more body and character to Valpolicella wine by running
it over the residue of the dried grapes used in the production of
Amarone Falasco. This procedure and subsequent refining by means
of storage for at least one year in small casks made from French
oak, reinforce the structure, colour, and flavour of Valpolicella
without altering its freshness.
