MAZZOLINO- Cabernet
Sauvignon Corvino
Corvino is made from 100% Cabernet Sauvignon
grapes, which has been recently introduced to the region. The varietal
does very well in the area due to the long sun exposure on the slopes
of the Mazzolino vineyards. The fermentation of this wine takes place
in temperature controlled stainless steel tanks and lasts 2 weeks.
This extended fermentation allows for excellent extraction of
color and tannins. The wine is aged one year in French oak of
which 25% is in new barrels. Corvino is full-bodied with a rich
red color. Its aromas are reminiscent of red berries, leather,
coffee and jam. On the palate, it offers a full mouth feel and
smooth tannins. Total production is 10,000 bottles per year.
